Classic Carbonara
Carbonara is perhaps hubby’s fave pasta dish. I remember the first time he made the recipe (which turned out to be a total flop!) without checking the cookbook! That was oh, five years ago? We were still in incognito mode and so we spent time at my close friend Tukog’s place. This gave birth to our nicknames: Tambok (fat) is me because obviously, I am (LMAO); Pandak (short) is hubby because he is not that tall, plus he hates it when we call him that; and Tukog (stick) is my friend who, as the name states, is stick thin! Yup, that’s Bok, Dak, and Kog for ya!
Okay, so much for that insignificant memory! I decided to test a few recipes I found online so I can make hubby his fave pasta dish when we’ll meet up again. I already vowed to pamper him and cook for him which is prolly not a good idea since I am not much of a cook! But even if he’s the cook in the family, he still loves to have others cook for him. I’ve done a bit of that already and he eats whatever I make for him. He should, though because if he doesn’t……well, let’s just say that it wouldn’t be a pretty sight! bwahahahaha

Ingredients
• 1/2 pound bacon, chopped
• 1 tablespoon chopped garlic
• Freshly ground black pepper
• 1 pound fresh spaghetti, cooked al dente (I used penne rigate for mine)
• 4 large eggs, beaten
• Salt
• 1 cup freshly grated Parmigiano-Reggiano
• 1 tablespoon finely chopped fresh parsley leaves
Note: I added a about a cup of milk to make the sauce more creamy
Directions
In a large saute pan, over medium heat, cook the bacon until crispy, about 6 minutes. Remove the bacon and drain on paper towels. Pour off all of the oil except for 3 tablespoons. Add the garlic. Season with black pepper. Saute for 30 seconds. Add the crispy bacon and the pasta. Saute for 1 minute. Season the eggs with salt. Remove the pan from the heat and add the eggs, whisking quickly until the eggs thicken, but do not scramble. Add the cheese. Mound into serving bowls and garnish with parsley.

The Verdict
It was surprisingly good but I don’t think hubby would like it. It wasn’t what you would call a Filipino Carbonara, though. I think I’ll try another recipe, any suggestions?
